Jinotega Nicaragua is a community that has extremely high standards for quality coffee all the way from cherry ripeness to paying a buck to do direct purchasing from the producers. The cherries are usually washed and then slowly dried in a controlled drying facility for about 28 days.The Jinotega region is Nicaragua's primary coffee growing region. The name Jinotega comes from the word xinotencatl, which may mean "city of old men" or "neighbors of the Jinocuabos
