Average farm sizes in Vietnam tend to run pretty small. This allows them to focus on quality beginning with picking the cherries when they are ripe and gets them a better premium price for red cherries.
The roast:
We decided to go for a espresso roast this time around so all you home baristas get ready to dial in! This also brews great as a drip or full immersion.
Our cupping:
The initial aroma we got was pipe tobacco. As we broke the crust it sweetened up a tad and released an almost fruity like aroma. First impressions were a sweet tobacco with earthy tones. As the flavor sat and developed longer it transitioned to a hay-like and malty flavor, with some fun fruity notes in between that were reminiscent of a tarte pomegranate.
